STRONG WILLED, STUBBORN SOMETIMES, HE NEVER BACKED DOWN ON HIS PRINCIPLES OR WORK ETHIC. HE GUIDED OUR FAMILY THROUGH TROUBLES TIMES, KEEPING US TOGETHER AND PROTECTED FROM THE VICISSITUDES OF LIFE AS MUCH AS HE COULD. EVERYTHING I KNOW I LEARNED FROM HIM. BY NAMING MY WINERY AFTER HIM, I WANTED TO RECONNECT TO AND CONTINUE TO APPLY HIS BASIC, CORE PRINCIPLES: WORK HARD, STAY TRUE TO YOUR MANTRA, FOLLOW YOUR INNER CALLING, LOOK FOR QUALITY FIRST, AND ALWAYS ALWAYS LET NATURE LEAD THE WAY!

THIS IS HOW I MAKE WINE AT BONTZU CELLARS, JUST THE WAY GRANDPA BONTZU DID.

FOR ME, WINEMAKING STARTED WITH MY GRANDPA BONTZU, WHO INSPIRED ME TO CONTINUE THE TRADITION TODAY WITH BONTZU CELLARS. I MAKE WINE THE TRADITIONAL WAY, GROWN ON THE VINE, HARVESTED BY HAND, AND NATURALLY FERMENTED.

2014 Carmenere Alc. 14.50% | pH 3.87 | TA 5.80 g/l

TASTING NOTES: Intense inky, violet colors are complemented by aromas of bell pepper, tobacco, tar and coffee. These almost echo the palate profile largely dominated by plums, crème de cassis, green pepper, and wild spices. This wine pairs with grilled meats, smoked meats, lamb, duck, spicy and savory dishes.

WINEMAKER NOTES: Grapes were picked in late October, early morning and immediately crushed. Fermentation started the next morning, due to the native yeast. Racked twice, and aged for 26 months in neutral French and American oak.

TASTING NOTES: This deep-violet, nearly black colored wine stays true to its Walla Walla origins with truffles, musk, earth, and wet forest floor on the nose. Vivid flavors of black currant, licorice, and blackberries make this wine a perfect pair for any bold foods. We like blue cheese, grilled vegetables, and roasted game with this particular vintage.

WINEMAKER NOTES: Grapes were sourced from Breezy Slopes and one of the oldest vineyards in Walla Walla, block 97 of Morrison. Crushed early morning, native fermented, aged in neutral oak barrel for 24 months.

TASTING NOTES: AGED IN A COMBINATION OF FRENCH AND AMERICAN OAK, THIS 100% MALBEC WAS SOURCED FROM COCKBURN RANCH VINEYARD AND SHOWCASE FRUIT FLAVORS OF SWEET SPICINESS, RED FRUIT AND A HINT OF SMOKED BACON, YET PLUMP AND JUICY.

2014 CABERNET SAUVIGNON Alc. 14.40%

TASTING NOTES: THIS FULL BODIED RED WINE SHOWS STRONG AROMAS OF BLACKCURRANT FRUIT, BLACK CHERRIES, AND BLACKBERRIES. AGING TIME IN NEUTRAL FRENCH AND HUNGARIAN BARRELS INFUSED FLAVORS OF TOBACCO, CEDAR, AND BLACK PEPPER. VERY GOOD AS A YOUNG WINE, IT WILL BECOME AN EXCELLENT WINE IF CELLARED FOR AT LEAST A COUPLE YEARS.

WINEMAKER NOTES: THANKS TO ITS VERSATILITY, THIS CABERNET SAUVIGNON IS A PERFECT PAIR FOR BRAISED SHORT RIBS OR MUSHROOM STROGANOFF... AND DON'T BE SHY TO PAIR WITH A JUICY BURGER OR A MEATY PIZZA!

TASTING NOTES: This Alsace style Pinot Gris shows hints of freshly cut pears and red apple on the nose. Generous acidity and citrus zestiness across the palate finish dry with underlining flavors of pears and tropical fruit. This wine pairs beautifully with citrus salad, delicate fishes, and most Japanese food including sushi.

WINEMAKER NOTES: This wine was whole bunch pressed with native yeast fermentation. With fermentation finished, the wine was barrel aged for 6 months in neutral French and American oak, giving the wine an improved mouth feel and balancing of the wine.

2016 Viognier Alc. 13.40% | pH 3.18 | TA 6.40 g/l | RS 0.62%

TASTING NOTES: The 2016 Viognier has dominate aromas of honey-suckle, jasmine, and a hint of orange blossom. Dominate flavors of stone fruit, peach, and apricot dominate the palate with a nice spicy finishing touch. Also noticeable is the full body with a slight oily or viscous mouth feel that makes this wine memorable. Our viognier works perfectly with Dungeness crab, grilled or broiled fish, and any butter or cream pasta dishes.

WINEMAKER NOTES: The 2016 grapes for the viognier were whole bunch pressed, in a reductive style. The wine was fermented in stainless steel and neutral oak barrels to round out the mouthfeel and balance.

Lady D - Rose of Counoise Alc. 13.00% | pH 3.50 | TA 6.90 g/l | RS 0.50%

TASTING NOTES: Just looking at this wine, you know that you are in for a unique treat. The 100% Counoise Rose produces a salmon color not seen in most other summer wines. The subdued aromas of cherries and strawberries draw you into this complex and layered wine. The bright and fresh flavors of tart cherries, apricot, and baking spices make this a flavor you will not soon forget. Drink this on the patio with a bucket of ice or if you need to pair it with food, find your favorite warm weather flavors.

WINEMAKER NOTES: Our Rose is produced from Counoise grapes grown at our Breezy Slopes Vineyard. The vineyard features dry farming, no fertilizer, no pesticide, and no insecticide applications. Lady D was Native fermented in stainless steel barrels and aged for 6 months to produce this unique wine.

2015 Reserve Grenache Alc. 14.50% | pH 3.79 | TA 5.40 g/l

TASTING NOTES: This flashy, full-headed wine brings aromas of strawberries, cinnamon and orange blossom, all encircled in an earthy, yet suave touch. Flavors of sweet vanilla, toast and candied fruit make this wine a perfect pair for roasted meats, vegetables and many spicy ethnic dishes.

WINEMAKER NOTES: The wine uses 100% Grenache fruit from Cockburn Ranch, a vineyard located in the foothills of the Blue Mountains at an elevation of 1,200 feet. It features silt loam soil, good drainage, and southeast exposure yielding one of the highest quality wine grapes in the valley. The wine was racked twice and aged for 18 months in a six-year-old, 500-liter American barrel.

THE VINEYARDS
IT WAS WITH A CLEAR PURPOSE THAT WE LOCATED BONTZU CELLARS IN THE VICINITY OF THE BEST VINEYARDS IN WALLA WALLA AND COLUMBIA VALLEY'S AVA. NOT ONLY THAT WE BELIVE IN THE NATURAL, TRADITIONAL WAYS OF MAKING WINE, BUT ALSO THAT OUR STANCE IS THAT EACH INDIVIDUAL SITE PROPAGATES AND INFLUENCES THE FLAVORS IN GRAPES AND HOW THOSE FLAVORS TRANSLATE INTO WINES IN A VERY PARTICULAR WAY.

WALLA WALLA VALLEY AVA

Cockburn Ranch Vineyard
Our vineyard source of Granache and Malbec is located on the south-east corner of the Walla Walla AVA, in the foothills of the Blue Mountains. With an elevation of 1,000 to 1,200 feet and a south-east sun exposure, the vineyard provides a silty-loam clay type soil, and wind-blown, very good air drainage. The proximity to the Blues allows for enough precipitation during the spring season, which is the reason irrigation is called for only during the hottest time of the growing season.

Breezy Slopes Vineyard
We source our Syrah, Sangiovese, Carmenere, and Barbera from this vineyard. While only 5 acres, this vineyard is located at the highest elevation in the entire Walla Walla AVA, at 1,780 feet! No irrigation is required, and we don't spray our vines with chemicals. This is our pride and joy, this is the way we want the grapes to grow! We grow the grapes ourselves; a total symbiosis grape grower/winemaker!

The Rocks Vineyard
We get our Syrah from this amazing piece of land with its renowned cobblestone based soil, reminiscent of old Walla Walla river bed; unique earthiness flavors, strong tannins, barn-like flavors and an unmistakable mushroom nose makes this site a true gem!

Colombia Gorge AVA

Bolton Vineyard
Located just a few miles south of The Dalles, OR. This vineyard gives us the Gewurtztraminer grapes. Nestled between hills in a shallow valley, protected from harshness of Eastern Oregon winters the vineyard has a dry, hot climate in the summer that helps develop the core flavors that the grape is known from: perfumed, with lychee, grapefruit and gardenia bouquet.

IT IS WISHFUL THINKING THAT ONE CAN ALTER THE INTRINSIC QUALITIES OF THE JUICE OR OF THE WINE DURING THE VINIFICATION PROCESS. WE CAN ONLY RETAIN THE POTENTIAL OF THE GRAPE.
A WINE, AND THE VINES IT COMES FROM, HAVE TO BE IN BALANCE WITH THE SOIL, THE ATMOSPHERE, THE ENERGY FROM THE SOLAR SYSTEM AND ITS INTIMATE SURROUNDINGS. WE KEEP AND IMPLEMENT THESE FACTORS WHEN GROWING GRAPES AND DURING THE WINEMAKING PROCESS, BY APPLYING ORGANIC OR SUSTAINABLE PRACTICES ON THE VINEYARD WE SOURCE OUR FRUIT FROM, WITH THE ULTIMATE GOAL OF BECOMING A BIODYNAMIC WINE PRODUCER OF BRILLIANT WINES, AND AUTHENTIC WINES FOR SURE!
